RECIPE:"Must-Try" Delicious "QUICK AND EASY" TOM YUM SOUP
Soups are such a comfort food. This 'Tom Yum' soup is so delicious and easy, give it a try!
Tom Yum Soup
40 Mins Serves 4
ingredients- 1lb shrimp, peeled and deveined
- 500 ml chicken broth
- 300ml water
- 1 cup sliced mushroom
- 3 tsp lime juice
- 2 lemongrass
- 2 Thai chili
- 1 galangal blue ginger
- 12 kaffir lime leaves
- 2 kaffir limes
- 1 tsp fish sauce
- 2 tsp Thai chili paste
- salt and pepper to taste
- chopped cilantro for garnish
- Wash, cut and crush the ingredients: lemongrass 1" long pieces; Thai chili 1/2" long pieces; galangal 6 pieces. Peel off the stems of the kaffir leaves
- Bring the water to a boil in a large pot over medium flames, add in ingredients ( 1 ). Cover and bring to a boil
- Reduce heat to low and simmer for 20-30 minutes
- Add Chicken broth, fish sauce, and chili paste
- Toss in the shrimp and mushrooms
- Continue to simmer for another 10 minutes over medium-low heat until shrimps are fully cooked
- Stir in the lime juice to taste the sourness, add salt and pepper to taste.
- Garnish with cilantro and serve.
- (You can add little rice noodles, just add 300-500ml of chicken broth for more soup)
