Easy Leftover Peking Duck Noodle Soup
I made Peking duck yesterday. The duck was savoury, crispy and delicious, but what I was looking forward to the most is making Duck Noodle Soup with the leftovers. This soup recipe is so easy and great for colder days. Simply put all your ingredients in a large pot and let it simmer for 1 hour. Serve with soft rice noodles, leftover duck and sauce, it’s so yummy, you have to try this recipe!
Leftover Peking Duck Soup
serves 2 total cooking time: 1hr
ingredients
- 1 left over Peking duck, separate meat and bones
- 1 onion, halved
- 1 carrot, circles
- 5 garlics, cloves
- 3 lemongrass, crushed
- 1 tbsp rock sugar or brown sugar
- 1/2 tbsp fish sauce
- salt and pepper to taste
sauce ingredients
- 1/2 cup soy sauce
- 1/2 tbsp sesame oil
- 1/2 tbsp hoisin sauce
- 1 tbsp water
directions
- in a small bowl, add sauce ingredients, mix well and set aside
- remove any cooking meat left on duck for serving later
- in a large pot, add cooking oil
- brown carrots, onions and garlic
- add duck bones, lemon grass, cinnamon sticks and sugar
- fill 3/4 full with water
- bring to a boil and then simmer for 1 hr
- make noodles
- when ready to serve, add noodles and duck meat to a bowl, using a strainer, add hot boiling broth
- serve with sauce
