Thai Coconut Mussels - Improving Skin Complexion

Making sure to prep the mussels first with a salt water cornmeal bath to reduce grit, this Thai Coconut Mussels dish is super easy and delicious. Thai Coconut Mussels
serves 3-4 total cooking time: 15 mins
ingredients
- 1 1/2 lb mussels, scrubbed and degrassed
- 1/2 tbsp cooking oil
- 1 garlic, pressed
- 1 tbsp, ginger, grated
- 3 tbsp red curry paste
- 1 can coconut milk
- 1/2 cup chicken stock
- 1/2 tbsp parsley, minced
- rice or baguette for serving
cleaning mussels
- in large bowl add 1/3 cup of salt water for every gallon of water, add 1-2 tbsp of cornmeal, mix well and soak mussels for min 1 hr
- scrub and remove grass, rinse well
directions
- in a wide pot, add cooking oil on medium
- add garlic and ginger, stir for a minute
- add red curry paste, coconut milk and chicken stock
- bring to a boil, add mussels and cover
- let cook on medium for 15 minutes, add parsley
- serve warm with rice and baguette
