It’s a great substitute for beef, that’s why we decided to make Lamb Stew. This dish is flavourful and aromatic, made with wholesome ingredients like carrots, potatoes, red wine, rosemary and lamb, it’s also very hearty. This Lamb Stew is the perfect dish for dinner or lunch. Give this easy recipe a try!

Lamb Stew

serves 3-4 total cooking time 2hrs

ingredients 

  • 1 tbsp cooking oil
  • 2 lb lamb, cubed into 1 inch pieces 
  • 2 tbsp balsamic vinegrette
  • 3 carrots, peeled and cut into rounds 
  • 1 large onion, diced
  • pinch of salt 
  • freshly ground pepper
  • 3 garlics, pressed
  • 1/4 can tomato paste
  • 1 tsp cumin
  • 1 tsp paprika 
  • 5 cups beef broth or 2 tbsp of beef bouillon and 5 cups of water, warm 
  • 1 cup red wine
  • 1 tbsp Worcestershire sauce
  • 3 sprigs rosemary 
  • 2 lb mini potatoes, halved 
  • 1/4 parsley, minced for garnish 
  • baguette for serving 

directions 

  1. in a large Dutch oven or pot, heat oil
  2. sear lamb, working in batches, remove and set aside
  3. deglaze pan with balsamic vinegrette, stir for 1 minute
  4. add onions and carrots, let cook down, about 5 mins, add salt and pepper
  5. add garlic and tomatoes paste, cook until tomato paste has darken about 2 mins
  6. add cumin and paprika, return lamb to pot
  7. add warm beef broth, Worcestershire sauce, rosemary and mini potatoes
  8. bring pot to a boil and turn down to simmer for 2 hours
  9. serve with freshly baked bread
