Sweet and Sour Vietnamese Braised Veal Shoulder
This is one of my favorite ways to make veal, this original authentic Vietnamese recipe can be made with pork ribs but because of dietary restrictions, I will be using veal shoulders instead. I think it's even more delicious! Give this recipe a try!
Sweet and Sour Veal Shoulder
serves 3 total cooking time 1:15hr
ingredients
- 1 veal shoulder cubed 1" inch pieces
- 4 tbsp dark soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp sesame oil
- 1/2 cup brown sugar, divided
- 1 tsp allspice
- 1 tbsp cornstarch
- 2/3 cup water
- salt and pepper
- 1 tbsp cooking oil
- optional: 1/2 cup green beans
- optional: sesame seeds for garnish
directions
- marinate veal in soy sauce, hoisin sauce, sesame oil, 1/4 cup brown sugar, allspice, and a pinch of salt and pepper, cover and let marinate for at least 1hr
- in a small bowl combine, 1/4 cup brown sugar, water, and cornstarch, set aside
- preheat a cast iron pan on medium/high (use something with a lid and can withstand the heat)
- add 1 tbsp cooking oil
- strain the veal and add to skillet (add a lid to avoid splatter)
- cook veal until done, and drain liquid from the pan
- add sugar mixture
- turn down to low, let it simmer for 1 hr
- check and mix veal every 10 minutes, add 1/4 cup of water halfway through or when it seems too dry, you don't want the meat to burn but just carmelize
- remove the veal and add green beans (optional)
- cover and let cook until done
- on a plate, layer rice, veal, and green beans
- garnish with sesame seeds
- serve warm
