Keep it Moving - Vietnamese Shaken Beef 'Bo Luc Lac'

Vietnamese Shaken Beef 'Bo Luc Lac'

Vietnamese Shaken Beef ingredients
- 1 1/2 lb sirloin beef cubed
- 1 tsp lemon juice
- 1 tsp grated ginger
- 3 cloves garlic minced
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp hoisin sauce
- 1 tsp fish sauce or Worcestershire sauce
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup cooking oil
- 1/2 cup snow peas
- 1/2 cup sweet peppers
- 3 mushrooms
- 1/2 cup apple cider vinegar
- 2 tbsp brown sugar
- 1/2 tsp salt
- 1/4 cup hoisin sauce
- 2 tbsp peanut butter or almond butter
- 1/2 tsp chili pepper flakes
- 1 tbsp water
- watercress or arugula
- tomatoes thinly sliced
- cucumbers thinly sliced
- carrots thinly sliced
- sweet onions thinly sliced
- toasted crushed peanuts
- cooked rice
- combine beef with marinade and let sit for at least 1 hour
- combine vinaigrette and set aside
- combine dipping sauce and set aside
- prepare rice and fresh side veggies, add cucumbers, carrots, and sweet onion into a bowl with 1 tbsp of vinaigrette
- preheat a wok on medium/high, add cooking oil
- add a single layer of beef onto wok, let it cook for 1 minute, using spatula flip beef, let cook for 1 minute, finish by continuously "shaking" the beef
- cook until desired tenderness, usually about 4 minutes,
- add in sliced veggies, snow peas, sweet peppers, mushrooms, cook for 3 minutes
- add vinaigrette and let cook for 2 minutes
- coat veggies and beef well
- serve with rice and fresh veggies
- garnish with crush peanuts
